Hogwarts Legacy Phoenix Location
The Phoenix is the rarest beast you can obtain in the new game. Unlike many, you'll have to meet some specific requirements before you can head out and grab one, and they aren't just obtainable via exploring with a nab-sac.
The Phoenix isn't to be found in any of the creature dens across the Highlands, but is instead linked to a specific Hogwarts Legacy quest. You'll need to work your way through the quests Deek assigns you in the room of requirement until you've completed the Foal of the Dead quest.
This will unlock Phoenix Rising, provided you're far enough through the story and have hit level 20. This quest will walk you through the whole process, and you'll be able to grab the Phoenix with your nab-sac at the very end.
Can you get more than one Phoenix?
Unfortunately, the Phoenix you obtain from this quest will be the only one you'll be able to get in Hogwarts Legacy. Even if you did obtain two, Phoenixes breed by dying and being reborn, so growing your population would be a little tricky.
Phoenix feathers are a very valuable resource, but you'll be able to harvest plenty from one bird. Feed and brush them in the usual way, and upgrading all your gear should be more than achievable.
